Our client a local Group Hotels is looking for a Food and Beverage Manager to be fully responsible for every aspect of the FandB operation of the Main Hotel and all other FandB outlets within the Company.
For this role your responsibilities will include, but not limited to, the following tasks and duties:
A) To establish manage and maintain an FandB management team for all the hotels and acknowledge full responsibility for all the team's actions.
B) To be fully aware and comply with all legal aspects in relation to the serving of food and drink on behalf of the company.
C) To be responsible for all the day to day FandB operations of the business.
D) To manage the FandB Operation to the best of your ability driving revenue and operating profit.
E) To be responsible for the overall FandB quality of the Main Hotel and FandB outlets of the Company.
F) To compile a monthly FandB summary report on the business for Head Office. G) To protect ownership in every aspect to the best of your ability and to be aware that this position is a representation of ownership at all times.
H) To dress appropriately and smartly each day whenever presenting the Company.
I) To be included in the Senior Management roster.
J) To be highly visible to all customers.
K) To host and accommodate weekly FandB operations meeting and to ensure to attend the daily morning meeting at the amphitheatre hotel and that the FandB department is represented at each hotels morning meeting where appropriate.
L) To be reachable at all times by the hotel for emergency matters and to appoint a person to assume this responsibility should you be out of reach.
M) To ensure systems and procedures are followed for all centrally controlled functions i.e. purchasing, reservations, stock control, maintenance, human Resources, security etc.
N) To follow all accounting procedures and systems of the company.
O) To be part of a senior management team, which encourages a rich cultural background with clear ethics and respect for others.
Specific responsibilities: To work very closely with all Senior Management within the complex hotels paying particular attention on centrally controlled functions. To be responsible for FandB budgets and forecasts. To establish, monitor and maintain SOP procedures for all FandB outlets. To ensure all FandB staffs are trained and follow established SOP procedures. To ensure al FandB staff will follow a departmental orientation. To establish all food menus in conjunction with the executive Chef that are cost-defined out. To establish Beverage menus for all outlets To ensure all menus are priced appropriately according to the budget set. To be responsible for the presentation of the menus. To be responsible for the overall quality of food production. To ensure adequate staffing levels are in place for all FandB areas to be able to execute service as stated in the SOP manual. To be responsible for Micros and related FandB systems in all FandB outlets. To ensure proper stock control takes place for all FandB stores and equipment To ensure all FandB requisitions are signed by you. To ensure all staff are trained in the handling of cash as per company standard. To be pro active in attracting business to the hotel. To attend revenue management meeting as and when required. To ensure that Food and Beverage Hygiene standards are met at all times. To manage, maintain and improve standards at all times and ensuring the manuals is kept up to date. To ensure staffing rosters are published in a timely fashion at least one week in advance. To ensure that all staff takes an active part in updating guest history details. To ensure that all staff are fully aware of all VIP staying in-house. To be fully responsible for all FandB purchases and requisitions for the main hotel and to ensure that purchasing and receiving standards and systems are followed at all times. To ensure that all contracts for the Hotel are countersigned by the Operations Director or managing director of hotels and the Director of Finance. To ensure good relations are kept with local dignitaries and officials. To ensure the communication channels are followed as per the communication chart. To ensure the FandB areas are spotless and clean and tidy To ensure the FandB staff follows hotel policies for the handling of chemicals and their use and to ensure chemicals are stored properly. To be responsible for waste management of all properties in complex. To be responsible for the stewarding departments within all the complex properties. To ensure a maintenance fix it system is up and running To ensure VIP program is executed at all times. To monitor customer complaint program and ensure a structure is in place that a manager deals with any incident throughout the FandB department. To be fully aware of all programs taking place in the theatre, To ensure the hotel is always prepared when the theatre has productions. To follow eco friendly policies as established by the company.
